Vinification The grapes are gently destemmed and lightly crushed. Fermentation with hyper-oxygenation of the must in temperature controlled stainless steel tanks (15- 18°C.).
Ageing After fermentation, the wine settles on lees in stainless steel tanks for ten months. Bottled wine is aged in temperature-controlled binning cellars for further ten months.
Appearance Blazing, bright wine with a winning straw yellow colour with sudden greenish reflections.
Nose Accurate, fruity (exotic fruit, peach) with a sweet floral touch (lime) well blended. Delicate mineral and spicy memories (white pepper).
Palate Appreciated for its balanced fresh savoury structure and for a fruity memory matching perfectly to the olfactive one. Round and beautiful finish.
Serving suggestions Although dedicated to meat dishes of farmyard animals or beef but also horse meat, it is a wine for the whole meal.
Serving temperature With its strong personality and characteristics can be combined with shellfish, molluscs and sea starters. Also, ideal with delicate soft cheese, perhaps even flowered crust cheese. Best served at 13°C
