Vinification The grapes are gently destemmed and lightly crushed. Fermentation takes place in temperature-controlled steel tanks (15/18°C).
Ageing After fermentation, the wine settles on the lees in stainless steel tanks for ten months. Bottled wine is aged in temperature-controlled binning cellars.

Colour
Appears of golden yellow colour, great clarity and brightness with lively golden reflections.
On the nose
On the nose, it opens with a sulfurous note that fades after a few minutes. It expresses a good intensity with notes of dried fruit, seared orange peel, marzipan, dried flowers, and apple compote (we advise letting it sit in the glass for a few minutes to allow the sulfurous note to dissipate).
On the palate
On the palate, it is dry and aggressive, with pronounced minerality and very feeble but present tannic notes; finally, a delicate vanilla finish. It is surprising with the balance, which regards all the other components.
Food pairing
Wine that is suitable for well-seasoned dishes with strong flavours.
Serving temperature
To serve at 12°C.

Colour
To the eyes it is bright, very clear showing a beautiful straw yellow with tiny greenish reflections.
On the nose
The nose is of fine intensity, cadenced with scents of exotic fruit (pineapple and banana), sweet flowers (acacia), with a slight hint of flint stone; citrus (grapefruit), gently honeyed and musky. Sometimes, emerge the citrus peel dried on a BBQ hot plate.
On the palate
The mouthfeel is precise, clearly varietal, showing the right structure with good acidity and excellent taste; well expressed aromaticity. Young wine, with great perspective.
Food pairing
To serve with sauced fish, first dishes of good structure and spiciness, such as the Risotto alla Milanese.
Serving temperature
Serve at 12°-14°C to magnify its balance.

Colour
Bright yellow with lemon and grassy highlight.
On the nose
Tropical fruit notes as Banana and pineapple with a soft Smokey and white flowers give enrich the perfumes. In the glass it ends with a fine citrusy an spicy vanilla scents.
On the palate
The freshness and the sapidity are the first sensors on the palate wich match the visual notes. It also brings back the olfactory notes with the citrusy and vanille scents, wich are very elegant on the palate.
Food pairing
It works very well with fish dishes, for example the “Boreto alla Graisana”

Appearance
Blazing, bright wine with a winning straw yellow colour with sudden greenish reflections.
Nose
Accurate, fruity (exotic fruit, peach) with a sweet floral touch (lime) well blended. Delicate mineral and spicy memories (white pepper).
Palate
Appreciated for its balanced fresh savoury structure and for a fruity memory matching perfectly to the olfactive one. Round and beautiful finish.
Serving suggestions
Although dedicated to meat dishes of farmyard animals or beef but also horse meat, it is a wine for the whole meal.
Serving temperature
With its strong personality and characteristics can be combined with shellfish, molluscs and sea starters. Also, ideal with delicate soft cheese, perhaps even flowered crust cheese. Best served at 13°C
