Fermentation takes place in stainless steel tanks with frequent pumping over a period of about three weeks, to extract pigments and aroma from the grape skins. Then follows racking.<\/strong><\/p>\n<p><em>Ageing<\/em><br \/><strong>The wine ages for eighteen months. Compact colour and correct intensity. Excellent clarity and noticeably lively reflections.<\/strong><\/p>\n<p>Nose<br \/><strong>The nose begins with a very distinctive and elusive note reminiscent of manna. It then opens with good intensity in a range of well-blended perfumes reminiscent of red fruit preserves, sweet and delicately expressed spices (cloves, cinnamon, licorice) and then crispy accompanied by a barely perceptible balsamic note. A complex wine on the nose, to be left to oxygenate in order to grasp the various and elegant nuances. The longer it is allowed to oxygenate, the more it is enriched in its elegance.<\/strong><\/p>\n<p>Palate<br \/><strong>On the palate it is dry, the tannins are perceptible but delicate. The savoury note prevails, accompanied by a correct alcohol content; both blend perfectly, to give elegant taste-olfactory sensations. A ready and very enjoyable wine.<\/strong><\/p>\n<p>Serving suggestions<br \/><strong>A wine to be paired with red meats, also with sauces, with hard and medium-aged cheeses (Montasio or Monte Veronese).<\/strong><\/p>\n<p>Serving temperature<br \/><strong>To be offered, in a heated space, at 15\u00b0C (then room temperature brings it to optimum for tasting).<\/strong><\/p>\n<\/div><\/div>\n\n<div class=\"et_pb_tab_1 et_pb_tab clearfix et_pb_module et_block_module\"><div class=\"et_pb_tab_content\"><p><em>Annata<\/em> <strong>2017\u00a0 \u00a0 \u00a0|\u00a0 \u00a0 \u00a0<\/strong><em>Alcool<\/em> <strong>12.0% vol<\/strong><\/p>\n<p>Appearance<br \/><strong>Brilliance and clearness of this wine well expressed as a corollary of an intensive Ruby red with purple highlights.<\/strong><\/p>\n<p>Nose<br \/><strong>The visual notes, of this young wine, are confirmed by hints of fresh fruit (small fruits especially red-rasp- berry, cherry), with delicate notes of freshly cut grass and streams of transparent spiciness (green and white pepper).<\/strong><\/p>\n<p>Palate<br \/><strong>Tasting denotes a good correspondence with nose, confirming the fruitiness (raspberry and cherry with addition of plum ashes red Amolo). Fresh wine, well managed tannins, adequate structure and beautiful persistence. Suggesting a correct aeration of this wine, we denote already the excellent drink.<\/strong><\/p>\n<p>Serving suggestions<br \/><strong>Although dedicated to meat dishes of farmyard animals or beef but also horse meat, it is a wine for the whole meal.<\/strong><\/p>\n<p>Serving temperature<br \/><strong>To be served in a warm environment, at 16-17\u00b0C. Recommended aeration after uncorking.<\/strong><\/p>\n<\/div><\/div>\n\n<div class=\"et_pb_tab_2 et_pb_tab clearfix et_pb_module et_block_module\"><div class=\"et_pb_tab_content\"><p><em>Annata<\/em> <strong>2015\u00a0 \u00a0 \u00a0|\u00a0 \u00a0 \u00a0<\/strong><em>Alcool<\/em> <strong>13.5% vol<\/strong><\/p>\n<p><em>Appearance<\/em><br \/><strong>Crystal clear and bright in an elegant ruby red finish with vivid borders and natural transparencies.<\/strong><\/p>\n<p><em>Nose<\/em><br \/><strong>Intense notes of red and black fruit flavours are dominating (raspberry, plum, blackberry) which perfectly complement the balsamic scents of the ageing woods.<\/strong><\/p>\n<p><em>Palate<\/em><br \/><strong>With good structure, fruity, convincing for its nose-palate correspondence, its full body and discreetly fine tannin level that gives it life. Although still evolving, already extremely enjoyable.<\/strong><\/p>\n<p><em>Serving suggestions<\/em><br \/><strong>Recommended serving with red meat or medium mature flavourful cheeses.<\/strong><\/p>\n<p><em>Serving temperature<\/em><br \/><strong>To be served in a warm environment, at 16-17\u00b0C.
